For years Bill has been a well known secret in the trade - it seemed appropriate to put as much of his knowledge online and available to the public as possible.  Sauternes is also a secret, criminally hidden on the top shelf of the supermarket or the back page of a wine list - quite simply the finest white wine in the world and the most versatile wine of any colour for drinking with food.
